Yummy, healthy snacks for Summer

I've fallen off the healthy eating bandwagon with a great big bump and I seriously blame the weather. And last week's break in London. Okay, the sunshine has stopped me craving stodgy puddings and homely, comforting food like stews and casseroles, but it's got me craving sweet things like cupcakes and ice creams instead. They are so yummy and so refreshing that I can't stop at one either, so this week, to get me back on track, I have prepared myself and my freezer for those moments when I cave in - especially now that the rain seems to be back!


Obviously, the first thing to eat is fruit, but trust me, I know that it's so easy to pick up a bar of chocolate instead of an apple! I find eating fruit boring unless I mix it up a little, so some ideas are:
  • Make a fruit smoothie - frozen fruit will make it a bit more refreshing in the warmer months and you can enjoy finding new combinations.
  • Freeze your fruit - my favourites to freeze are grapes and watermelon for an ice lolly-type of snack, or frozen banana for more of a 'creamy' snack. Yum!
  • Fruit salad - Chop up a load of different fruits - my favourites are berries and more exotic fruits like mango and pineapple - or cut wedges of fruit and serve them with a 'dip' of 0% fat Greek yoghurt and passionfruit. The dip alone is absolutely gorgeous and I could eat it by the bucketfull. You can add some nuts and marshmallows for some variety too.


Another snack I love is jelly. Nomally found at a 5 year old's birthday party, but massively low in calories and tasty too. Make sure you choose the sugar-free varieties.


For those of us who love ice cream (Ben & Jerry's... mmmm a little tub of heaven... ahem, where was I?!) try buying the frozen yoghurt varieties, or just take your favourite low fat yoghurt and chuck it in the freezer! My favourite is the Muller Light Lemon Cheesecake yoghurt, which is just delicious. A quick tip though, take it out of the freezer about 5 minutes before you want to eat it, just to give it time to soften up a bit. The great thing about freezing your own yoghurts is that it's in individual servings, so it's easier to control how much you're eating.


Sugar free 'tip-tops' are another great option if you want to have something really cold and refreshing, or for something a little bit more grown up, try a sorbet. Like my fruit salads, I prefer the more exotic flavours, like mango. Yum! It's kind of like a Slush Puppy crossed with an ice cream, but with fewer calories.


There you go, my favourite Summer snacks for those of us attempting to eat a bit healthier! My diet started again yesterday and I'm hoping to stay on track this time! I need to start jogging again. I was doing so well and kinda feel like I've lost my mojo a bit. I'm determined to start again though! Do you have any yummy recipe ideas for me to try?
