Bacon-Wrapped Filet Mignon with Shiitake Mushroom Sauce & Crispy Ridged Potato Chips

The filet mignon (French for "petite or dainty fillet") is the most prized cut of meat from a cow. Universally recognized for its tenderness, this small portion of meat is extracted from the tenderloin, which is a snake-like-shaped piece of meat sandwiched between the sirloin and top sirloin cuts. Each steer produces two tenderloins but they combine to only weigh maybe 4 to 6 pounds in total, hence its relative rarity and consequently higher cost. The filet mignon's extreme tenderness is derived from the fact that that particular part of the steer does not get any workout at all, remaining tender throughout the lifetime of the steer. Which is good news for the rest of us because after biting through a medium rare-cooked filet mignon, you can never go back to any other cuts of meat.

Walking through the meat section of my local grocery store last week, I came across a surprising find. Vacuum packed in a compact and neat package were two circular cut filet mignons (weighing about 5 oz. each), already wrapped tightly around them with bacon. Now, that is not the reason for the surprise. What got me all excited was the price. For $4.99, I was able to purchase two pieces of filet mignon wrapped in bacon! Just imagine this, a gourmet dinner entrée for two that will cost you around $10 or less (after adding in side dishes). An impressive and delicious treat for you and a significant other without breaking the bank.

For this dish, I chose to make a shiitake mushroom sauce and some crispy ridged potato chips to go along with the filet mignon. I started by rehydrating some dried shiitake mushroom in water. After that's done, no not discard the soaking water as we'll use it later to add more flavor to the sauce. Julienne the mushrooms as they are now nice and pliable. Now, lets sear the filet mignons on a deep skillet. Make sure the oil is nice and hot before browning the meat on both sides. Remove the filets from the skillet and finish them in a low oven set between 300 and 350 degrees F. No sense in rushing it and you wouldn't want to go over medium temperature on this one. Trust me, a well-done filet mignon is such a waste of a good piece of meat.

Lets now make the sauce starting from the skillet that was used to brown the meat. Sauté some finely chopped shallots and garlic, scraping the bottom of the skillet to mix in all the fine savory meat crust left behind from the earlier meat searing. Deglaze the skillet with a little bit of red wine and some of that mushroom soaking water from earlier. Add the julienned mushrooms and half a can of beef broth (can be easily obtained from the grocery store). Simmer the sauce until it reduces to half the liquid level that you started with or until it reaches a saucy consistency (sticks lightly to the spoon). Taste it and season with salt and pepper if desired.

As for the potato chips, I found a chance to use my new mandolin, so I went for the ridged cut. You can either use regular Russert baking potatoes or red bliss potatoes for this application. I chose the latter. Just wash them thoroughly (no need to peel) and go crazy on the mandolin. Make sure that the oil that you are using for deep frying the potato chips get to a desired temperature of 350 degrees F and above or the resulting chips will be soggy. Deep fry them until golden brown and when done, place them on paper towel-lined plates to drain the excess oil. Immediately after coming out of the frying oil, sprinkle salt and pepper on the chips to get the seasonings to stick to the surface.

And there you have it, a gourmet meal without the gourmet prices. Why pay more than $50 for a couple of filet mignon entrées at a restaurant when you can do it quite as easily from the comfort of your own home for a fifth of that price. And you get to impress that special someone in your life as well. Bon Appétit!

Ladies I'm Calling You Out



Okay, so while it is true that I am the General Manager of The Wine Country, as well as the French wine buyer…fancy no? Yeah well along with those lofty titles I have the added bonus of bathroom attendant when it’s needed…hooray me. It’s not an official title, and it is something we all kinda jump in and do but, seems like I always end up being the one that, “finds” the mess that needs attending, just lucky like that I guess.



So I’m all for solidarity and what not, I’m down for the sista’s and all but dude…..what the hell happens to you lovely ladies when you walk into a public restroom?! You walk in, all dolled up, smelling like a meadow, oh and can we talk about that too…y’all stank, for the love of all that is holy, can you please save the smelly goo until after the tasting? Miss. Shalimar….you have clearly been wearing that dreadful stuff too long, it has destroyed your filter…you my dear wreak to high heaven, sorry but somebody had to say it…you walk in looking like a million bucks and leave the tinkle-la-torium looking like a prison cell…wtf?!



I’m a chick, I know all the nasty business that goes on, it’s gross, I get it but do you have to let the rest of know it’s “that time of the month”…I assure you, we’re not curious. Germs are an issue for many of you, while I don’t get it I am sympathetic, but can you not just like double up on the seat liners? Must you hover over the wizzer and leave yer…er, um..mark?! You’re gonna wash your hands like a surgeon anyway, why not gather your wiz papers and then wash? Yuck.



Cannot tell you what it is like in there after a busy tasting, seriously ladies…I always think about that guy, the one that looks like he just hit the lotto when he walks out with the heavily perfumed, hair sprayed stumbler that over enjoyed her first wine tasting, yes she is lovely, yes she is feeling all loose and frisky and yes she just left a poo smear on the ladies room toitty, enjoy yer delicate flower dude....score!

So you have made it to the wedding planning stage, congratulations! Now that you have set a date you need to start getting everything together that you will need for the big day. You need to take it in steps so that you won?t be overwhelmed; you know eat the elephant one bite at a time!

When you are choosing a wedding dress don?t just choose it because it looks pretty on the model. Your wedding dress should be something that you really like, but it should also go with your body type as well. MAC lipstick - Lavender Whip
I know, I know, it came out in like April/May, but I love it. Even more so now that I have a bit of colour. I'm still gutted that it was limited edition and I didn't get another one. I never thought I'd love purple lips as much as I do! Plus it's a cremesheen formula.


Ambre Solaire No Streaks Bronzer Dry Body Mist
My supervisor always has a sunkissed glow, which she recently revealed was down to this product. We've sold out in work as we all snapped them up! I started off with the light version, but now that I have a base colour I've started using medium to deepen it. It's so easy to use and doesn't make you look like you've been tangoed. You just have a healthy glow. This was a budget friendly £10ish and was part of a BOGOF offer too. Two tins of gorgeous self tanner for a tenner? Bargain!


Yummy Yummy Yummy shower cream wash by Lush
I adore this stuff. I use it every single day. It smells gorgeous - a mix of strawberries, honey and almonds. Mmmm, yummy yummy yummy! It also leaves my skin feeling super soft too, as it's not your typical shower gel. It's a cream wash, so it feels more moisturising. I wish they would make a body lotion of this because the combo of this then the same smelling lotion would be awesome. I'd be all over that! This is the one thing I repurchase from Lush over and over.


GOSH nail polish - Ocean
It is hard to tell from this awful picture, but Ocean is such a beautiful colour. You won't know the true beauty of this colour until it is on the nails, because even the colour you can see in the bottle isn't a true likeness. On the nails, it's a bit more greeny teal, with lots of gold shimmer. It's a fab summery colour that always earns me nice compliments. It's long lasting too, which is always a bonus.


MAC beauty powder blush - On A Mission
For me, this was the stand out item from the Style Warriors collection. It is a gorgeous shade that I think works well on any skintone. It looked just as beautiful on my pale skin as it does now that I've self-tanned. It's buildable too, so you can control the intensity of the colour. I think everyone should have this shade in their collection.


Boots Extracts Cocoa Butter body butter
This is really thick and rich so I like to use it at nightime, but it is the best moisturiser I have ever used on my dry skin. Although it is rich it doesn't feel heavy on my skin, and it absorbs fairly quickly. Plus it has the yummy smell of chocolatey cocoa butter, which neither me nor my fiance can resist! I also carry a little tub in my handbag, for any dry skin emergencies!


Papaya and Mango lip butter - Liplucious by Beautifully Delicious
This is my Holy Grail lip product. It's an intensive lip moisturiser that absorbs quickly, so is great to use before you apply lipstick, at night, or even just a quick slathering during the day. This one smells gorgeous - it's papaya and mango and is very tropical and summery. There's also a coconut and shea butter version, but this one is just irresistibly fruity. Yum!

Beep!

Yesterday Joe got his hospital "doctor-y" badge and beeper. Can you believe this man is excited about having his beeper?! He played with it all night. I told him he's going to come to HATE that beeper!! Ha!!
I'm home for the week from work so I decided to set up a meeting with the Ronald McDonald House here in Wichita. I've been really wanting to find a way to give back. Since the Ronald McDonald House has a close relationship with the hospital Joe is working at, it made perfect sense! Yesterday I met with the coordinator and my first "day" is Friday! I'll be helping them with odds and ends around the house. Eventually I might even try cooking a meal for the families. Let's see if I can get brave enough for that! ;-)

Just 2 More Days

So in two very long days, my dear son, Jeremy will be home. He has completed his Sophomore year at Uof L but being that he has like a job and a house to pay rent on and some stuff, he cannot stay all summer...pout. No matter, I will spend every second I can with the young man, that without his knowing (at the time) changed my life...cured my cranial aninal inversion, and taught an eighteen year old, that some things, are in fact worth fighting for....no matter how painful.

I found out I was "with child" when I was 5 months pregnant, Jeremy was born 2 months later...that'll light a fire under yer ass I assure you. When he was born he weighed 3 pounds, was not breathing and had a mother that had no idea what to do...no job, no money, a mother that was not speaking to me and a man in my life that was....well, let's just say he was NOT very nice to me. After Jeremy, my mother came around and adored him above all others, I found out that my feelings were not the most important and I had this little person, this tiny fighter that spent a month in the hospital fighting to be here...with me, I found my bite, and my heart and have never looked back.
