Crispy Baguette with Mushrooms, Arugula and Goat Cheese

I just had to share this recipe with all you lovely readers...its TOO good not to share! I made this up with the fresh ingredients I bought today at the Farmers Market...it makes a great appetizer or dinner entree! Enjoy!

Crispy Baguette with Mushrooms, Arugula and Goat Cheese

One baguette {I bought an Italian Herb Baguette at the Farmers Market and used this}
One 8 or 12 oz. Container of Goat Cheese
Butter
Handful of Fresh Arugula
1 pkg. White Mushrooms
1 C. Marsala or Madeira Wine
Olive Oil
Salt and Pepper

Preheat Oven to 350. Cut Baguette open and butter generously and then slather with goat cheese. Place Baguette in Oven for 10-15 Minutes until lightly toasted and warm. While bread is cooking put 1 Tbsp of Butter and 1 Tbsp of Olive Oil in saute pan. Saute onions until soft, add mushrooms until soft, add handful of arugula and Wine. Cook wine and arugula for about 4-5 minutes until the liquid has reduced significantly and arugula is wilted. Pour Mushroom/Wine Mixture over toasted bread. Turn oven to broil and broil bread w/ topping for about 1 minute or less until bread is browned on the edges...{keep an eye on it so it won't burn}. Enjoy!
