Chimicurri Sauce - An Argentinian Delight

Sometimes, the most delightful things are also the simplest to make. For example, take the chimicurri sauce, a green sauce originating from Argentina and Uruguay. It's uses are two fold. First, it is typically used as a condiment, like a dipping sauce. Second, it can also be used to marinate meats like steaks, chicken or pork. The basic ingredients in the chimicurri sauce are parsley, garlic, olive oil and vinegar. Additional ingredients like peppers, oregano, cumin, etc can also be added for some variations. It is delicious and best of all, so easy to prepare.

Here's what you need:
1 large bunch fresh parsley (remove the large stems)
6 cloves garlic
2 tablespoons dried oregano
1 cup olive oil
2 tablespoons red wine vinegar
1 tablespoon fresh lemon juice
Salt & pepper to taste

I like my chimicurri a little spicy and I usually also add:
2 jalapeƱos (seeded)
or 1/2 tablespoon red pepper flakes

All you need to do is chop the parsley and garlic (and jalapeƱos, if using) until fine. Add them together with all the other ingredients in a mixing bowl and mix thoroughly. Adjust the seasonings and you are done. Yes, you heard right, that's it. Nothing to it, right?
